Happy St. David’s Day!

Here is a recipe I adapted for Welsh cakes. They are delicious and rich with a flaky texture, and are perfect with a cup of tea.

1 ½ c  all purpose flour

1/2 c granulated sugar 

1/2 tsp mix spice    

1/2 tsp baking powder  

1/4 c butter 

1/4 c lard

1/3 c currants

1 egg  

Splash milk

Mix dry ingredients, then cream in fats.  Add currants and eggs. Roll  ¼” thick and cut into 6 cm rounds. Heat butter in frying pan on stovetop on medium, then turn down to medium low and fry until golden on both sides.
