Happy St. David’s Day!

Here is a recipe I adapted for Welsh cakes. They are delicious and rich with a flaky texture, and are perfect with a cup of tea.

1 ½ c  all purpose flour

1/2 c granulated sugar

1/2 tsp mix spice

1/2 tsp baking powder

1/4 c butter

1/4 c lard

1/3 c currants

1 egg

Splash milk

Mix dry ingredients, then cream in fats.  Add currants and eggs. Roll  ¼” thick and cut into 6 cm rounds. Heat butter in frying pan on stovetop on medium, then turn down to medium low and fry until golden on both sides.

    1. Hi there! I have to approve comments before they are posted.

I’m glad you love reading my posts.

My advice for writers is to find a topic you love, use the writing process (pre-writing ie brainstorming and organizing, first draft, revision and proofreading, spelling and grammar check, final draft), and then share it across social media.

      Good luck!
